Vinification:
The grapes are fermented on the skins after careful selection. Fermentation takes around 18 to 20 days at a controlled temperature of 28-29° C.
After racking the wine undergoes malolactic fermentation in inox vats before being aged in French oak barriques and tonneaux for nearly 14 months. Bottling takes place in early summer
