The grapes are fermented on the skins after careful selection. Fermentation takes around 18 to 20 days at a controlled temperature of 28-29 C.
After racking the wine undergoes malolactic fermentation in inox vats before being aged in French oak barriques and tonneaux for nearly 14 months. Bottling takes place in early summer

intense, dark ruby colour. Generous and complex

distinct aroma of plum and ripe cherry and notes of tobacco and spices
- In the mouth
full-bodied, with plenty structure and personality, and clear yet soft and elegant tannins that make for a lingering aftertaste and pleasant finish

Food pairing:
Goes well with: filled pasta, pasta with ragout, roast meats, piquant cheeses.

Serving temperature:
20-22 C
